MY WORK WITH PANDA & SONS

Panda & Sons hides behind a barber shop front on Queen Street and has spent the last decade collecting spots on the world's-best-bars lists. I'm Gorka Di Capitan and we shot this on a Sunday morning with Will behind the bar: selected as one of the 20 UK bartenders in The House of Suntory's 2026 DOJO programme, and busy building the cocktails for it.

His Kaizen menu, a menu built on continuous improvement, runs to three serves, and we photographed the full build of each one. A-ka Shun: a savoury, spicy red snapper of Roku gin, miso and Scottish tomatoes at their seasonal peak, finished with a Pilsner foam. Canvas: a Hibiki ritual serve on handmade coasters that reveal Shodō calligraphy when the essence touches them. And a Toki highball with its otsumami pairing, a freeze-dried snack that travels from sweet to savoury to spicy.

One afternoon, three serves. I hope we get to work together again soon.
