MY WORK WITH PANDA & SONS

Panda & Sons hides behind a barber shop front on Queen Street and has spent the last decade collecting spots on the world's-best-bars lists. I had wanted to shoot there for years; in August 2026 I finally got the call.

The shoot was for Will, one of the bartenders selected for The House of Suntory's DOJO programme, whose final stage asks each bartender to create and host a three-drink Kaizen menu in their own venue. We photographed the full build of his three serves at the bar: Hibiki poured over hand-cut ice, a red and white signature finished with a Japanese flag laid on the foam, and a Toki highball with its snack pairing on the side.

One afternoon, three drinks and a bar I had admired for years. I hope we get to work together again soon.
